just got back from trader joe's with oodles of things to work on this weekend:

- basil for pesto pasta

- organic apricots for pie with the usual crust

- potatoes and organic green bell peppers for a twisted version of seitanic jambalaya [seitan recipe is the same as the one I used the other time I made jambalaya, love the shredded result it has]

- flour tortillas to have myself a jolly ole teese-adilla since it's the one thing I miss from my pre-vegan days

I'm already gaining weight only thinking about these items. by golly!

this week i'm definitely going to make the tomato eggplant ragout i've been talking about now that i FINALLY found some decent eggplant. that will be served over creamy polenta and topped with fresh spinach& olive tepanade.
i'm going to undertake cooking with lentils this week for the first time ever. i have no idea why i have put this off for so long. it's ridiculous and uncalled for and i'm going to break the viscious cycle now. any suggestions that don't involve curry or tomatoes? (i love curry and tomatoes both but my husband hates them and i want him to eat with me if possible. and it IS possible)
millet-summer squash cakes are in the forcast as well; the first of the summer squash has come.
at this point i have decided i have so many different grains and beans and fresh/frozen/canned veggies that i'm not going to grocery shop any more except for essential fresh ingredients and milks/cereals until we've used up all this excess stuff we have. hench the millet-squash cakes and the desire to use the lentils taking up space in my pantry. i also have a huge surplus of barley for some reason.

After multiple trips to grocery stores, liquor stores, etc., I finally have everything to make recipes that have been poking at me for a while. Over the next week or so:

Vcon Not-tella
Chickpea Curry, Naan, and some sort of fancy rice
Pomegranate Blueberry Sorbet
Pie, and something with Kahlua - Maybe some sort of Mocha Kahlua Pie, but I need to get over this fear of pie crust, seriously.
Also, thinking about a recipe for Almond Butter Cherry Bread. White whole wheat flour is my new best friend. Don't tell Spelt.

I'm still planning a meal with Apple/Lentil/Hard Cider Seitan Sausages, but the meal will have lots of elements, and I don't think I'll get around to it this coming week. We'll see.

I decided to roast some potato wedges this morning so I could quickly reheat them (possibly in a skillet? microwave?) during the week.

I just read online though, that freezing and reheating roasted potatoes may not be too great of an idea. What do you think? I'm going to do it anyway, but do you have some tips for good meals that freeze and reheat nicely! Thanks!

I have kidney beans that have been cooking in the crockpot all night. Today, before I head off to work at noon, I'm planning on making Nigerian red kidney bean stew with a peanut sauce. This means that I'll have a tasty dinner and Ry won't have to head off to work hungry tonight.

Also, I'm planning on making "Buddha's Jewels" from New Recipes from Moosewood Restaurant (even though the title always morphs itself into "Golden Buddha Balls" in my head. I don't know why) tomorrow night as part of the Cookbook Challenge. I was planning on making it on Saturday, but I just realized that a big important martial artist is visiting our dojo this weekend and Saturday is the welcome banquet and we're all required to be there. Also, I'm supposed to be heading down to the Windmill Animal Rescue on Saturday morning. Essentially, there's a lot going on Saturday and Sunday (the day that I'm attending classes from the big important martial artist), so if I can cook before that, I'm going to be in better shape.

I also have to figure out what to do with a bunch of curly leaf spinach

Went to Whole Foods today and bought a TON of stuff, I have some recipes from Vegan With a Vengeance, Veganomicon, Skinny Bitch In the Kitch and Vegan Cupcakes Take Over The World that I bought stuff for. I'm thinking Pasta e fasioli (or however you spell it) for tomorrow night, but that depends upon if my non-veg mom is willing to have vegan dinners in a row-note: she thoroughly enjoyed the nutty vermicelli rice dish we had for dinner tonight though- So, if she is unwilling, I'll make the soup for myself and she can go it alone. I also bought the stuff to make Vegan Alfredo, stuffed shells, and 'Chicken' stew, I guess I'm in an Italian mode at the moment. I'm also going to make Vanilla Coconut cupcakes tomorrow, my first attempt failed because I didn't have any wheat pastry flour and thought "Oh, whole wheat flour should be fine" boy was I wrong, I ended up with dense, icky cakes. Nighty night.

 Tonight I made Creamy Tomato Soup from Veganomicon and I'm planning on freezing it in individual portions, it would be good to bring for lunch/supper for work.

I'm planning on making this sometime this week, with variations, as I have a rather large surplus of broccoli in the crisper.  

Since the cake disaster yesterday, I want to redeem myself so I'll either be making the Pound Cake again [this time with regular ol' Vanilla soy milk!] or Vegan with a Vengeance's Carrot Cake.  Ever since I got VWAV, I have been meaning to make this cake.  I'm so surprised I haven't yet, I looove carrot cake.

And I have some tempeh also hanging out in the fridge which I think will be going into that Sweet and Sour Sweet Potato & Tempeh dish in Eat, Drink & be Vegan.

Oh!  And I bought what I thought was Swiss Chard [turned out to be beet greens] on Saturday at the Farmer's Market and the damn things were wilted by sunday morning!  I'm not sure what to do with them now, maybe turn them into a green smoothie?

figure I should make this again before Chaz goes into total withdrawal mode since he loves them meatfree riblets so much.

I might have to nix the rustic plum and port tart plan, since the plums I bought two days ago don't appear to get any riper. s'okay though, there's always next week.

anyone who hasn't made the green-wa from YRR and the cumin lime tofu from ED&BV? get on it asap! both are way worth it.

I need to finish some cilantro, so I think I'll whip up a quick cilantro pesto [great recipe in Vegan Planet!] to put on top of the black bean chili with chocolate I prepared yesterday.
