Polenta and more polenta!  
This week I have roasted a huge pan of veggies (asparagus, yellow squash, potatoes, onion, and green beans) to go along with my mega pan of baked polenta!

I also made a pot of black bean soup (so good!).

So, we'll be munching on polenta, veggies, veggie wraps, and bean soup for the most part this week.

I'm starting to stock up for this winter. Especially for January/February when we'll be learning how to deal with a newborn baby and won't have time for anything other than taking something out of the freezer and putting it in a pot on the stove or in the oven.

So far, I have black bean soup and corn chowder (both out of fresh from the vegetarian slow cooker). This week, I'm planning on making a few batches of chickpea cutlets and roasting/grilling a ton of veggies and making up some minestrone.

Sounds awesome, and congrats on the impending wee one! Is this your first or are you already versed in sleep deprivation? ;-)

We just recently got a slow cooker, so I am looking forward to lots of soups, polenta, and chili this "winter" (Texas can't really be said to have winter).

Oh, its our first, but one of the things that they don't tell you is that you become well versed in sleep dep BEFORE the baby is born due to multiple trips to the bathroom in the middle of the night and general insomina, or (my personal favorite) waking up with a huge leg cramp that you simply can't get rid of. It's good training for what's to come, I suppose. :P

Oo! Chili should go on my list too. And polenta.

Have fun with the slow cooker! Mine is my favorite thing, since it means I don't have to cook immediately when I get home at night.

This is true!

Mine is about to be 3 (to be fair I have a 16 year old too, but they were so far apart it was like being pregnant for the first time) and every time someone mentions having a baby I remember all of the hilarious things my husband and I did to sneak naps!
