southern style dinner tonight:
I was going to make meat free bbq ribs, but to be 100% honest i attempted making the seitan on Sunday and was incredibly grossed out by not only the way it looked, but the way it smelled and i HAD to throw it away. no more seitan in my life. in fact, probably no more wheat meat as it always realllllllllllly grosses me out. like, i don't think i've ever come that close to getting physically sick while preparing something.
so instead, i'll be doing chickpea cutlets with mustard sauce, mashed potatoes with onion gravy, green beans and corn on the cob (corn for teh husband only, i'll have salad in it's place)
tomorrow: Spicy Schzuan Tofu, bok choy with crispy shallots, and roasted summer squash
thursday: Pasta salad with roasted portabella mushrooms, sun-dried tomatoes, onions, zucchini, carrots and some soy feta, probably a little italian dressing as well.
friday: something involving mushrooms, zucchini, golden beets and brown rice. maybe tofu as well. stir fry?
saturday: mexican food. black beans, rice, avocado, lettuce, corn tortillas and salsa will all be involved.
