I need to get out of this rut.  I've been browsing recipes on Martha's whole living website (lots of vegan recipes! or easily veganizable) though and I plan on making these dishes soon:

Quinoa Salad with Toasted Almonds

Spicy Crisp Tofu on Mint-Avocado Salad

Chilled Avocado Soup 

And I'd like to try that recipe for Frozen Soy Yogurt in the latest issue of VegNews...helloooo peanut butter.

I'm pretty much looking for quick, healthy meals.  It's too hot to cook any thing too labour intensive.

I try to eat mostly raw foods so I don't cook a lot. If I want something healthy and quick, I'll make a salad out of whatever I have in my fridge (which more often than not, doesn't include lettuce). Fruit salad, salad made of red and green peppers with onion and avocado, tomato salad, etc. Usually I just use a fresh lime squeezed over top as "dressing."

Also, green smoothies and smoothies in general are EXCELLENT and give you a lot of energy. You can use romaine lettuce (iceberg is way bad for you), kale, cucumber (good for your skin), or any other green veggies pretty much and some fruit. Just add ice and all you need is a basic blender. Chop everything very well and add a little water to get it going. Takes maybe 5 minutes and it tends to fill you up.

oh, plus I'm an awful cook so that's why I mostly eat raw foods.

I loooove green smoothies, kale is by far my favourite.

I'm interested in trying more raw foods but I've always been intimidated, ha ha. I think this heat will push me over the edge soon though. Maybe I'll start with a simple salad like you suggested. :-)

Raw foods are wonderful, but I've found that when I try the raw recipes, I'm unimpressed. I mostly just eat basic fruits and veggies all day and only vary with the smoothies. I also eat raw nuts and raw almond butter, but that's about all I ever eat.
