I have the next five days off, woo!  And it's Canada Day on tuesday so I'm planning on cooking a lot of food!  Lots of salads oddly enough since I rarely make salads.

Tommorow I'm making the Bulghur, Arugula & Cannellini Salad from Veganomicon, mostly so I can use up the arugula that desperately needs to be harvested.

So monday, I'll be hitting the beach so I'll be bringing along a Pan Bagna sandwich (the recipe from the Teany book I bought ages ago and haven't used yet, interesting and fun read though).  

Tuesday, Canada hits the big 1-4-1 so I'm making a brunch for the family, waffles, fruit salad, homefries, keeping it pretty simple.  Then for supper, weather permitting, we usually do a barbecue deal so I'm making the Potato Salad and the Portobello Salad with Spicy Mustard Salad (I'll probably be the only one eating it!) from Veganomicon.  Yay salads!  For dessert, I'm debating whether or not to make a no-bake strawberry pie with a coconut cream whipped topping or a more Canadian maple cake.

And I want to make the Hemp-anola from Eat, Drink & be Vegan to have something different for breakfast everyday (getting tired of my toast w/ almond butter routine).

potato+portabella salad?! how could ANYONE not like that? and how did i miss that recipe in Veganomicon... mmm i know what's for dinner as my hubby will DEFINITELY eat that.

They're actually two separate recipes! Although I'm sure a potato/portabello combination salad would be heavenly...you should invent it! :-)
