My lil' family is transitioning currently from "mostly" vegetarian to a vegan diet, yay!

On the menu for this week are:

Tempeh chili in a slow cooker (to be eaten for lunches etc. throughout the week)

Marinated, oven roasted veggies and brown rice

"Colorado Burritos" recipe from epicurious.com

Guacamole tacos

Balsamic strawberries seem to be all the rage, so I may try my hand at making some to toss in salad mixes too!

They sound great, our family relies on a lot of "tex-mex" foods, so finding familiar things to veganize will be the way to go I think. :)
